01 - In a medium bowl, combine oats, almond milk, Greek yogurt, peanut butter, honey or maple syrup, vanilla extract, salt, chia seeds, and protein powder. Stir until well combined and creamy.
02 - In a small bowl, whisk together cocoa powder, maple syrup or honey, and milk until smooth and glossy.
03 - Divide half of the oat mixture between two jars or containers.
04 - Spread half of the cocoa ganache on top of the oats in each jar.
05 - Layer the remaining oat mixture over the ganache.
06 - Finish with the remaining ganache on top.
07 - Sprinkle mini chocolate chips and chopped peanuts over the top.
08 - Cover and refrigerate for at least 4 hours, or overnight, until thick and creamy.
09 - Serve chilled. Stir before eating if desired.
